Valentine's Treats: Drunken Spaghetti. For the Food Aficionado who Doesn't do Chocolate
Let's face it. Restaurant eating out on Valentines day is stressful and subpar at best. There are always larger crowds, price gorging and pre fixe menus. It has been years since I've even wanted to take that route due to those items and I usually just order in or create a meal out of the ordinary that day to put a special feel on the day. Enter drunken noodles. I can hear the criticism of a few stating I'll find any way to incorporate alcohol into something, judgment taken lol. But once you see how easy this recipe is and how flavorful you will thank me.
INGREDIENTS
1 lb. spaghetti 1 bottle red wine 2 tbsp. butter 2 tbsp. extra-virgin olive oil 4 cloves garlic, minced 2 tsp. thyme 1 c. grated Parmesan 1/4 c. freshly chopped parsley
DIRECTIONS
Bring a large pot of salted water to a boil.
Meanwhile, in a large deep skillet over medium heat, melt butter with olive oil. Stir in garlic and thyme and cook until fragrant, about 1 minute. Pour in bottle of wine (be careful, it may splatter!) and bring wine to boil.
Cook spaghetti in boiling water until pliable, about 2 minutes, then add to boiling wine. Cook until al dente, about 8 minutes.
Toss with Parmesan and parsley and serve warm.
