Fish Fry Fridays

In our house Fridays are always made for some level of gathering and respite. Be it our family movie nights with home made pizzas, or our fish fry Fridays which we save for the warmer months usually. We invite a collective number of friends over, fry fish, throw together some charcuterie boards and sides, put bottles of rose on ice and enjoy each others company. I have been very fortunate to have been blessed with a group of friends who have turned into family over the years so its always a pleasure to break bread with these ladies on a Friday night. Ingredients:

  • 1/2 cup corn meal

  • 1/2 cup all-purpose flour

  • 1 1/2 teaspoon paprika powder

  • 1 tsp of garlic powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon of old bay seasoning

  • 1/2 teaspoon black pepper

  • 1 egg

  • 2 tablespoons water

  • 1 Pound(s) boneless whiting

  • 1 lemon cut into wedges

  • vegetable oil for frying




Directions:


Combine corn meal, flour, paprika, salt, garlic powder, old bay and pepper in shallow bowl or baking pan. In medium bowl, beat egg and water with fork until well blended. Dip fish fillet in corn meal mixture, coating all sides of fillet. Then dip in egg mixture. Dip in corn meal mixture again. Heat oil in large skillet over medium heat. Fry coated fish 2 to 3 minutes per side, or until fish flakes easily with fork. serve with lemon wedges to squeeze a pinch of fresh lemon juice right before eating.
