Summer Shrimp- One Pan Recipe

There are so many things we can be doing to enjoy long summer days and nights and even when we enjoy cooking the time spent in the kitchen is always on a decrease in the summer months. One due to the fact that it's already too hot to bein front of an oven for long periods of time and two I'm always looking for lighter fare in the hotter months. Enter my summer shrimp recipe. The marinade can be adjusted, they can be cooked outside on a grill or indoors on a sheet pan. It's the versatility and 15 minutes to eat that make it a sure bet for me. Ingredients:

1 lb. Jumbo Shrimp, Peeled And Deveined, Tails On Or Off (your Preference)

1/4 cup of soy sauce

3 tbsp. of Worcestershire sauce

1/8 cup of olive oil for marinade

2 tbsp. of brown sugar

6 cloves of garlic minced

1/2 lemon zest

Salt And Pepper, to taste

liquid smoke optional for added depth in taste



Directions :



Put the shrimp and all the ingredients in a ziploc bag and let marinate for at least 30 minutes


Preheat the oven to 400 degrees F.


Take shrimp out bag place on pan and drizzle some of the marinade over the shrimp. Roast until the shrimp are opaque 10 to 12 minutes. Finish with a generous squeeze of lemon and parsley as garnish if you like.


Serve with salad, veggie of your choice, rice or pasta!
