Show Them Your Love this V-Day with Cake: Pineapple Upside Down Cake that is
To me baking is love. I love making something special for loved ones on birthdays and holidays. Little touches such as those are ways in which I like to connect with people. Now here's the caveat to this. I am probably more anti valentines day then pro valentines day. I do still get purchases for the hubby and kids as this holiday is a favorite of theirs. Since college my girlfriends and I hold an annual galantines party. And this recipe is one I like to put on the menu. Easy, decadent and if you ask me I think it looks valentinesy (yes I make my own words up when the need arises lol). Do you have favorite dishes for this love holiday?? Ingredients:
(need standard size cast iron skillet)
TOPPING
1/3 cup butter
3/4 cup firmly packed brown sugar
7 slices pineapple (you can use canned or you may use fresh, whatever your preference)
7 maraschino cherries
CAKE
2 cups all-purpose flour shifted or cake flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup brown sugar
2/3 cup butter softened
3 eggs
2 1/2 teaspoons vanilla extract
3/4 cup milk
Heat oven to 350°F.
Melt 1/3 cup butter in cast iron skillet on top of stove. Stir in 3/4 cup brown sugar. Spread mixture evenly in pan.
Arrange 7 pineapple slices on top. Place cherry between each pineapple slice.
Combine flour, baking powder and salt in bowl; set aside.
Combine 1 cup brown sugar and 2/3 cup butter in bowl; beat at medium speed, scraping bowl often, until creamy. Continue beating, adding 1 egg at a time, until well mixed. Stir in vanilla. Gradually add flour mixture alternately with milk, beating at low speed and scraping bowl often after each addition.
Gently spread batter over pineapple mixture. Bake 40 minutes until top of pan is golden brown or until toothpick inserted in center comes out clean. Loosen sides of cake from cast iron pan by running knife around inside of pan. Let cool in pan for five minutes and then invert cake onto serving platter. If any pineapple or cherries come a loose, just place back on accordingly. Cool completely.
