Sheet Pan Dinner Wonder: Spicy Honey Garlic Shrimp with Balsamic Cauliflower



When I think of meal prep for the week and my cooking regiment the number one thing I think I have reiterated in my writings is that it has to fast but still palate pleasing in the sense that it is something outside of the ordinary. A lot of times I like to play with flavor palates I know I like, and may fuse together and then time how long it takes from prep to finish. I like to stay in the 25-30 minute realm and if it make the cut I get to introduce it to you all as fast weeknight sheet pan meals! The latest rendition is this shrimp with cauliflower. As you've seen in previous posts I have discussed my family's obsession with roasted veggies and roasted cauliflower is no exception. It pairs well with any balsamic vinegar and is cooks well on a sheet pan meal. I like some spice to my meals so I've included siracha in the recipe but you can omit if you like. You may also vary the balsamic to white balsamic vinegar if you like and get a striking different/similar flavor palate. To cut down on time I also like to use deveined shell on shrimp (you can use shell off but I find with roasting shrimp shell on acts like almost an incubator to the shrimp and so the flavor is more intense) and pre washed and cut florets of the vegetable I'm using. Ingredients:

  • 2 pounds of deveined shell on washed shrimp

  • 1/4 cup of olive oil

  • 1/8 cup of honey

  • 1/8-1/4 cup of balsamic vinegar

  • 4 tbsp. of siracha (or omit if this is not your liking)

  • salt and pepper

  • 4 gloves of garlic minced

  • 6-10 cherry tomatoes halved

  • Few leaves of basil julienned
