Nostalgia Foods: Homemade Rice a Roni ish (aka rice pilaf)

One of my favorite food growing up was Rice a Roni and as an adult I wanted to find something likened to it where I could also control the sodium content and lessen the artificial ingredients. This is a combination of a recipe I found and then doctored to my own taste liking. Is there a food that is nostalgic to your youth???



  • 1 tablespoon butter

  • 1tablespoon of olive oil

  • 2 tablespoons of minced garlic

  • 1 cup white rice

  • ¼ cup broken pieces thin spaghetti

  • 2 cups water

  • 1 cup of chick broth

  • 1 chicken bouillon cube

  • 2 tbs of chopped fresh parsley

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder


Melt butter and oil in a large saucepan over medium heat. Cook rice and spaghetti pieces in butter until browned, about 3 minutes. Add minced garlic at the end of the 3 mins and stir around pan until you get an aroma not browned, about a little less than 1 min.



Pour chicken broth and water mixture over the rice mixture. Stir chicken bouillon, parsley, garlic powder, and onion powder into the water; bring to a boil, place a cover on the saucepan, reduce heat to low, and cook until the water has absorbed into the rice and pasta, about 25 minutes.
