Meal Planning for after the holiday bustle: Pineapple Salmon Teriyaki

The largest days of the holiday season are in the tail end and yet our families or ourselves still need meals to sustain themselves, who knew? Enter an easy quick meal when one is finished with eating an array of the holiday foods and looking at all those new year's goals in terms of fitness and healthier eating fast approaching. This one can be served with some roasted veggies and brown rice or even a noodle of sorts. It's a weekday staple in our house and my 4 year old's favorite meal.


Ingredients:

  • 1 cup water

  • ¼ cup soy sauce

  • 5 teaspoons packed brown sugar

  • 1 tablespoon honey, or more to taste

  • ½ teaspoon ground ginger or 2 tsp fresh ginger

  • ¼ teaspoon garlic powder

  • 2 tablespoons cornstarch

  • 1/4 cup water

  • 2-4 rings of canned pineapple

  • 2 tablespoon sesame seeds

Directions for Sauce/ Marinade Making: (do ahead and leave in fridge prior for a few days)

  • Combine 1 cup pineapple juice, soy sauce, brown sugar, honey, ginger, and garlic powder in a saucepan over medium heat. Cook until nearly heated through, about 1 minute.

  • Mix cornstarch and cold water together in a cup; stir until dissolved. Add to the saucepan. Cook and stir sauce until thickened, 5 to 7 minutes.
