Lemon Bars : If Ever There was a Taste for Spring's Arrival!

Happy Spring! With the start of one of my favorite seasons of the year there are some food choices that always go hand in hand with the seasons. For spring it's lemons. Lemons are so versatile in that they are used in everything from savory to sweet dishes and even as a finishing act on items. One of favorites items to make utilizing this jack of all trade fruit is lemon bars. Easy to make with most ingredients you already have in the fridge and pantry and pretty enough for an at home desert or taking to a party.


Ingredients:

  • 1 cup butter, softened

  • ½ cup white sugar

  • 2 cups all-purpose flour

  • 4 eggs

  • 1 ½ cups white sugar

  • ¼ cup all-purpose flour

  • 2 lemons, juiced

  • 2 tsp vanilla

  • grated rind of one lemon

Directions:

  • Preheat oven to 350 degrees

  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.

  • Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs, vanilla and lemon juice. Pour over the baked crust.

  • Bake for an additional 20 minutes in the preheated oven. Let the bars cool to room temp and then place in the fridge for at least two hours
