How I love the ways of Stir Fry...

It's summertime and no one wants to be stuck in front of the stove for long copious amounts of time as your insides are already melting from outside temps. One of my favorite fast go meals is stir fry and there are always two ways I prepare this meal. The first is buying all the ingredients separately and putting them together after copious chopping, boiling, frying etcetera. And the other is a meal kit in which all the work in terms of the veggie prep is done for me and I just cook a protein to add and make a sauce (FYI I still like to use my own sauce as opposed to the one that may come in the kit because I can better control sodium levels, additives, etc.) In this post I'm deciding to show you the latter way as it makes more sense for summer prep meals. I'd love to know your thoughts!!??



Ingredients for Chicken:


  • 1 lb chicken breast, cubed

  • 1-2 cloves minced garlic

  • 1 tbs of ginger powder

  • salt and pepper to taste

  • 3 tablespoons veg oil, for frying

  • 1 tbs of sesame oil for frying


Sauce:

  • 3 cloves garlic, minced

  • 1 tablespoon ginger, minced

  • 2 teaspoons sesame oil

  • ⅓ cup reduced sodium soy sauce

  • 1 tablespoon brown sugar

  • 1 cup chicken broth

  • 1 tbs of mirin

  • ¼ cup flour or a cornstarch slurry (my preference) which is a mixture of 1-2 tablespoons of cornstarch mixed with 1-2 tbs of water.


Directions:


  1. In a large pan on medium-high heat, add oil. Once the oil is hot, add garlic and let it gather an aroma for about 30 seconds. Add chicken, season with salt and pepper and ginger powder, and sauté until cooked through and browned. Remove cooked chicken from pan and set aside.

  2. In the same pan, add the veggies and precooked noodles from the sir fry kit according to directions. Stir fry all veggies until they only become slightly tender still crisp to the touch which is about 4-5 mins on high heat.

  3. Add 1 tablespoon of sesame oil to the pan and toss and sauté garlic and ginger until fragrant with veggies for about 30 seconds . Add the remaining sauce ingredients and stir until smooth and slightly thickened.

  4. Return the chicken and vegetables to the pan, toss and stir until heated through.

  5. You can add some toasted sesame seeds for garnish
