Cooking with the Kiddos: Garlic Alfredo

Nothing brings me more joy than when my kids want to join me in cooking. And if I'm being completely transparent nothing brings me more anxiety as well (you try cleaning your kitchen after giving your 4 y/o complete autonomy in it). This meal is the favorite of my 9 y/o and one he had asked me to teach him to make. He now makes it on the days we eat it as a family. Can be paired with a salad and a protein added to the top or just enjoy as is. It's one of those come together in 15 mins or less meals, but so incredibly satisfying. Fast, satisfying and bonding time with my 9 y/o. I'd say it's a triple win for me...



Ingredients

  • 5 tbs of butter

  • 1 tbs of AP flour ( I like to use it as a thickening agent, not necessary though)

  • 8 ounces of fettucine noodles or whatever noodles you have on hand

  • 1 cup heavy cream ( I have even substituted half and half in a pinch)

  • 3 cloves of garlic finely minced or crushed with a garlic press

  • 1 ½ cups freshly grated Parmesan cheese

  • salt and pepper to taste

  • chopped parsley or even chopped chives (optional)


Directions

  1. Boil pasta according to the directions on the packet

  2. Melt butter in a medium saucepan over medium-low heat with flour. Add cream and simmer for 3 minutes (salt and pepper to taste), then add garlic. Let simmer until aromatic and then add in the cheese and whisk quickly, heating through. Stir in parsley/ chives if using and toss with cooked pasta of your choice. Add more cheese to top if you like
