Brown Sugar Chicken: When you still want to impress but you're short on time

There are some recipes I make or like to experiment with due to what I have on hand in the home and what I've seen in terms of recipes. This is one of them. This is recipe that works perfectly for the times when you are short on time but may have a large group to feed and still want a wow factor in terms of flavor and presentation. The original recipe I've seen called for a whole chicken but I have preferred chicken thighs due to them being more flavorful and soaking up the marinade better. Are there high quantity wow factor recipes with low input in your repertoire?? Would love to hear about them!


Ingredients:


2 pounds of chicken thighs patted dry

1 stick of butter, room temperature

1tablespoon of ginger

1 tablespoon of kosher salt

1 teaspoon of ground black pepper

1 teaspoon of paprika

1 tablespoon of dried Italian seasoning

1 teaspoon of garlic powder

3 tablespoons of brown sugar

1 lemon


Instructions:


Preheat oven to 400 degrees. In a small bowl combine softened butter and all of the dry ingredients. Liberally rub butter mixture all over the chicken pieces. Be sure to rub under the skin too! Place chicken on a cookie baking sheet and cook until golden brown. Cook for 50 minutes or until internal temp of the chicken reaches 165. If you want a crispy skin finish under the broiler on high for 5 mins watching so that it doesn't burn. Finish with a squeeze of fresh lemon juice and top with some chopped fresh parsley for garnish and enjoy.
